
Best Greek Quinoa Salad
Ingredients
- 3 1/2 cups chicken broth
- 2 cups quinoa
- 1 cup grape tomatoes halved
- 3/4 cup fresh parsley chopped
- 1/2 cup kalamata olives sliced pitted
- 1/2 cup red onion minced
- 4 ounces feta cheese chopped
- 3 tbsp olive oil
- 3 tbsp red wine vinegar
- 2 cloves garlic minced
- 1 lemon halved
- salt and ground black pepper to taste
Notes
Take broth and quinoa to a boil in a saucepan. Reduce temperature to medium-low, cover, and simmer until quinoa is soft and water has absorbed 15 to 20 minutes. Shift quinoa to a large bowl and set aside to cool approximately 10 minutes. Watch Now
Mix kalamata olives, onion, feta cheese, olive oil, tomatoes, parsley, vinegar, and garlic within quinoa. Squeeze lemon juice over quinoa salad, summer with salt and pepper, and toss to coat. Chill in the refrigerator, 1 to 4 hours.
