
Brian (Greek Baked Zucchini and Potatoes)
Ingredients
- 2 pounds potatoes peeled and thinly sliced
- 4 large zucchinis thinly slicedv
- 4 small red onions thinly sliced
- 6 ripe tomatoes pureed
- 1/2 cup olive oil
- 2 tbsp chopped fresh parsley
- sea salt and freshly ground black pepper
Notes
Preheat oven carefully to 400 degrees F (200 degrees C).
Unfurled potatoes, zucchini, and red onions in a 9×13-inch baking dish, or preferably a larger one. Use two baking recipes if necessary. Cover it with pureed tomatoes, olive oil, parsley. Season it properly with salt and freshly ground pepper. Toss all elements together so that the vegetables have evenly coated. Watch Now
Bake it in the preheated oven, mixing after 1 hour until vegetables are tender and the fog has evaporated about 90 minutes. Cool it slightly before serving, or serve at room temperature.
