
Cauliflower Tabbouleh
Ingredients
- 1 large head cauliflower cut into florets
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 1 clove garlic minced
- 3/4 cup tomatoes chopped
- 1/3 cup scallions chopped
- 1/3 cup fresh mint chopped
- 1/3 cup fresh parsley chopped
- salt and ground black pepper to taste
Notes
Heartbeat cauliflower florets in a sustenance processor until hacked into rice-sized pieces, around 10 seconds.
