
Easy Zucchini-Tomato Side Dish
Ingredients
- 2 tbsp olive oil
- 1 small onion chopped
- 1 clove garlic minced
- 2 small zucchinis cubed
- 1 tbsp tomato paste
- 1 beefsteak tomato cubed
- 1 tbsp herb de Provence or more to taste
- salt and freshly ground black pepper
- 1 pinch white sugar
- 1 tbsp chopped fresh basil leaves or to taste
Notes
Heat olive oil carefully in a large skillet and cook onion until delicate and translucent, around 5 minutes. Include garlic and cook for 30 seconds. Include zucchini and cook until relaxed, approximately 3 minutes. Blend in tomato glue and tomato. Season with herbs de Provence, salt, black pepper, and sugar blend in basil and serve.
