
Greek Chicken Pasta
Ingredients
- 1 (16 ounces) pasta package linguine
- 1/2 cup red onion chopped
- 1 tbsp olive oil
- 2 cloves garlic crushed
- 1 pound chicken skinless boneless breast meat
- 1 (14 ounces) can marinate artichoke hearts
- 1 large tomato chopped
- 1/2 cup cheese crumbled feta
- 3 tbsp parsley chopped fresh
- 2 tbsp lemon juice
- 2 tbsp dried oregano
- salt and pepper to taste
- 2 lemons wedged, for garnish
Notes
Bring a pot of carefully salted water to a boil. Then cook pasta in boiling water until tender yet firm to the bite, 8 to 10 minutes; drain.
Heat the olive oil properly in a skillet over medium-high temperature. Add onion and garlic; sauté till fragrant, about 2 minutes. Stir in the chicken and cook, occasionally stirring, until the chicken is no longer pink properly in the hub and the juices run clear approximately 5 to 6 minutes.
Reduce temperature to medium-low; add artichoke hearts, tomato, lemon juice, oregano, feta cheese, parsley, and cooked pasta. Cook it and stir it until heated through regarding 2 to 3 minutes. Remove from heat, season with salt and pepper, and garnish with lemon wedges.
