
Greek Island Chicken Shish Kebabs
Ingredients
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic minced
- 1 tbsp ground cumin
- 1 tbsp oregano dried
- 1/2 tbsp thyme dried
- 1/4 tbsp salt
- 1/4 tbsp ground black pepper
- 2 pounds skinless boneless chicken breast
- 6 wooden skewers
- 2 large green or red bell peppers cut into 1-inch pieces
- 1 large onion quartered and separated into sections
- 12 cherry tomatoes
- 12 mushrooms fresh

Greek Island Chicken Shish Kebabs: Whisk the olive oil, vinegar, garlic, lemon juice, cumin, oregano, thyme, salt, and black pepper together in an enormous glass or clay bowl. Add the chicken and hurl to coat equitably. Spread the pan with saran wrap; marinate in the fridge for at any rate 2 hours.
Absorb wooden sticks water for around 30 minutes before use.
Preheat an open-air flame broil for medium-high heat; gently oil the mesh.
Expel the chicken from the marinade and shake off the abundance fluid. Dispose of the rest of the marinade. Then again string bits of the marinated chicken with bits of ringer pepper, onion, cherry tomatoes, and mushrooms onto the sticks.
Cook the sticks on the preheated barbecue, turning much of the time until pleasantly sautéed on all sides, and the chicken is never again pink in the middle, around 10 minutes.
