
Greek Pasta with Tomatoes and White Beans
Ingredients
- 2 (14.5 ounces) tomatoes cans Italian-style diced
- 19 ounces beans cannellini
- 10 ounces fresh spinach washed and chopped
- 8 ounces pasta penne
- 1/2 cup cheese crumbled feta
Notes
Cook the pasta in a large bowl of boiling salted water till al dente.
Meanwhile, mix tomatoes and beans in a large non-stick skillet. Take to a boil over medium-high heat. Reduce temperature, and simmer 10 minutes.
Add spinach to the sauce; cook it for 2 minutes or until spinach wilts, stirring regularly.
Serve the sauce over pasta, and sprinkle with feta.
