
Italian Grilled Eggplant Caprese
Ingredients
- 2 tbsp olive oil
- 1 tbsp fresh garlic grated
- 1/2 tbsp salt
- 2 small purple eggplants cut into 1/2-inch slices
- 1 tomato sliced 1/8-inch thick
- 1 (8 ounces) package fresh mozzarella thinly sliced
- cooking spray
- 3 leaves fresh basil cut into thin strips
Notes
Join olive oil, garlic, and salt in a little bowl; put in a safe spot.
Preheat an outdoor grill carefully to 400 degrees F (200 degrees C) and gently oil the mesh.
Put eggplant cuts on the hot grill and cook for 3 to 4 minutes. Turn eggplant and brush with the oil blend. Spot 1 cut of tomato and one cut of mozzarella cheese on every eggplant piece. Close the top and cook cheese continuously has liquefied 3 to 4 minutes. Move to a plate and sprinkle with basil.
