
Mediterranean Bean Salad
Ingredients
- 15.5 ounces garbanzo beans
- 15 ounce kidney beans drained
- 1 lemon zested and juiced
- 1 medium tomato chopped
- 1/4 cup red onion chopped
- 1/2 cup fresh parsley chopped
- 1 tbsp caper rinsed and drained
- 3 tbsp olive oil extra virgin
- 1/2 tbsp salt or to taste
Notes
Mediterranean Bean Salad: In an enormous bowl, mix the garbanzo beans, kidney beans, lemon juice, and get-up-and-go, tomato, onion, parsley, escapades, olive oil, and salt. Spread, and refrigerate for around 2 hours, mixing sporadically, before serving.
