
Mediterranean Brown Rice Salad
Ingredients
- 1 1/2 cups brown rice uncooked
- 3 cups of water
- 1 red bell pepper thinly sliced
- 1 cup frozen green peas thawed
- 1/2 cups raisins
- 1/4 sweet onion
- 1/4 cup Kalamata olives chopped
- 1/2 cup vegetable oil
- 1/4 cup balsamic vinegar
- 1 1/4 tbsp Dijon mustard
- salt and ground black pepper to taste
- 1/4 cup feta cheese
Notes
Mediterranean Brown Rice Salad: Heat the dark-colored rice and water to the point of boiling in a pan over high heat. Lessen heat to medium-low; spread and stew until rice is delicate and the fluid has ingested, 45 to 50 minutes.
Consolidate red ringer pepper, peas, raisins, and olives in a bowl.
Whisk the vegetable oil, vinegar, and mustard together in a different bowl for the balsamic dressing.
Mix darker rice and balsamic dressing into the vegetable blend — season with salt and black pepper.
Top the dark-colored rice and vegetables with feta cheddar before serving.
