
Mediterranean Chicken
Ingredients
- 2 tbsp olive oil
- 2 tbsp white wine
- 6 chicken breast halves skinless, boneless
- 3 cloves garlic minced
- 1/2 cup onion diced
- 3 cups tomatoes chopped
- 1/2 cup white wine
- 2 tbsp fresh thyme chopped
- 1 tbsp fresh basil chopped
- 1/2 cup kalamata olives
- 1/4 cup fresh parsley chopped
- salt and pepper to taste
Notes
Heat the oil and two tablespoons white wine in a wide skillet over medium heat. Combine chicken and sauté about 4 to 6 minutes each side, until golden. Transfer chicken from skillet and set aside.
Sauté garlic in pan drippings for 30 seconds, then combine onion and sauté for 3 minutes. Combine tomatoes and bring to a boil. Lower heat, add 1/2 cup white wine and simmer for 10 minutes. Append thyme and basil and simmer for five more minutes.
Return the chicken to skillet and cover. Cook over low temperature until the chicken is cooked through and no longer pink inside. Combine olives and parsley to the skillet and cook for 1 minute. Season it properly with salt and pepper to taste and serve.
