
Mediterranean Chickpea Salad II
Ingredients
- 1 (15 ounces) can garbanzo beans (chickpeas) drained and rinsed
- 1 Roma (plum) tomato seeded and diced
- 1/2 medium green bell pepper diced
- 1 small onion, finely chopped
- 1 little clove garlic minced
- 1 tbsp fresh parsley chopped
- 2 tbsp olive oil
- 1 lemon juiced
Notes
In a bowl, hurl together the garbanzo beans, Roma tomato, green ringer pepper, onion, garlic, parsley, olive oil, and lemon juice. Spread, and chill until serving.
