
Mediterranean Couscous Salad
Ingredients
- 2 tbsp olive oil
- 2 cups couscous
- 1/2 cup mung beans dried
- 4 cups vegetable broth
- 2 tbsp salt divided
- 1 cucumber diced
- 2 tomatoes diced
- 1 lemon juiced
- 1 tbsp cilantro chopped
- 1/2 tbsp ground black pepper
Notes
Turn on a multi-practical weight cooker, (for example, Instant Pot(R)) and select Sauté capacity. Heat olive oil; include couscous and mung beans. Cook and mix for 2 minutes include vegetable soup and one teaspoon salt. Close and lock the cover. Select high weight as indicated by the producer’s guidelines; set the clock for 20 minutes. Enable 10 to 15 minutes for a strain to manufacture.
