
Mediterranean-inspired Chickpea Salad
Ingredients
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp oregano dried
- 1 tbsp garlic chopped
- 15 ounces chickpeas drained
- 1 (6 ounces) can small black olives drained
- 1 (6 ounces) jar marinated artichoke hearts
- 1 (6 ounces) jar roasted red peppers, drained and chopped
- 3 ounces feta cheese crumbled
- 1 1/2 ounces non-peril capers rinsed and drained
- 1 (10 ounces) jar dolmans (grape leaves) drained and rinsed (optional)
Notes
Whisk together oil, vinegar, oregano, and garlic for the dressing in a little bowl until mixed.
Combine chickpeas, olives, artichoke hearts, cooked red peppers, feta cheese, and tricks in a considerable bowl. Add dressing and hurl to coat. Present with dolmans, whenever wanted.
