
Mediterranean Kale
Ingredients
- 12 cups kale chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil or as needed
- 1 tbsp garlic minced
- 1 tbsp soy sauce
- salt to taste
- ground black pepper to taste
Notes
Put a steamer insertion into a saucepan, and stretch with water to just below the bottom of the steamer. Cover, and take the water to a boil over high temperature. Combine the kale, recover, and steam until just tender, 7 to 10 minutes depending on thickness.
Speed together the lemon juice, olive oil, garlic, soy sauce, salt, and black pepper in a large bowl. Toss the steamed kale into dressing until well coated.
