
Mediterranean Lentil Salad
Ingredients
- 1 cup lentils dry brown
- 1 cup carrots diced
- 1 cup red onion diced
- 2 cloves garlic minced
- 1 bay leaf
- 1/2 tbsp dried thyme
- 2 tbsp lemon juice
- 1/2 cup diced celery
- 1/4 cup parsley chopped
- 1 tbsp One teaspoon salt
- 1/4 tbsp black pepper ground
- 1/4 cup olive oil
Notes
In a saucepan mix, lentils, carrots, onion, garlic, bay leaf, and thyme. Combine enough water to cover by 1 inch. Take to boil, reduce temperature and simmer uncovered for 15 to 20 minutes or till lentils are tender but not soft.
Drain the lentils and vegetables and transfer bay leaf. Combine olive oil, celery, parsley, lemon juice, salt, and pepper. Toss to blend and serve at room heat.
