
Mediterranean Wrap
Ingredients
- 1 red onion sliced
- 1 zucchini sliced
- 1 eggplant
- 1/4 pound fresh mushrooms sliced
- 1 red bell pepper sliced
- 1 tbsp olive oil
- salt and ground black pepper to taste
- 4 whole grain tortillas
- 1/4 cup goat cheese
- 1/4 cup basil pesto
- 1 large avocado sliced
Notes
Mediterranean Wrap: Spot the onion, zucchini, eggplant, mushrooms, and chime pepper into a massive compartment with a tight-fitting cover. Shower the olive oil over the vegetables and season with salt and pepper. Close the top and shake to coat.
Heat a flame broil dish or skillet over medium heat. Spot the prepared vegetables on the preheated plate, mix and cook until delicate, around 10 minutes.
Spread every tortilla with one tablespoon goat cheddar and one tablespoon pesto. Separation of the cut avocado among the tortillas and top with the blended veggies crease in the base of every tortilla and fold each up into a cozy wrap.
