
Mediterranean Zucchini and Chickpea Salad
Ingredients
- 2 cups zucchini diced
- 1 (15 ounces) can chickpeas
- 1 cup tomatoes halved grape
- 3/4 cup red bell pepper chopped
- 1/2 cup sweet onion chopped
- 1/2 cup feta cheese crumbled
- 1/2 cup Kalamata olives chopped
- 1/3 cup olive oil
- 1/3 cup basil leaves packed fresh
- 1/4 cup white balsamic vinegar
- 1 tbsp fresh rosemary chopped
- 1 tbsp caper drained and chopped
- 1 clove garlic minced
- 1/2 tbsp dried Greek oregano
- 1 pinch crushed red pepper flakes (optional)
- salt and ground black pepper to taste
Notes
Blend the zucchini, chickpeas, tomatoes, red Chile pepper, onion, feta, Kalamata olives, olive oil, basil, vinegar, rosemary, escapades, garlic, oregano, red pepper pieces, salt, and black pepper in an enormous bowl.
