
Mediterranean Zucchini and Chickpea Salad
Ingredients
- 2 cup diced zucchini
- 15 ounces chickpeas drained and rinsed
- 1 cup tomatoes halved grape
- 3/4 cup red bell pepper chopped
- 1/2 cup sweet onion chopped
- 1/2 cup feta cheese crumbled
- 1/2 cup Kalamata olives chopped
- 1/3 cup olive oil
- 1/3 cup basil leaves packed fresh
- 1/4 cup vinegar white balsamic
- 1 tbsp fresh rosemary chopped
- 1 tbsp caper drained and chopped
- 1 clove garlic minced
- 1/2 tbsp Greek oregano dried
- 1 pinch red pepper flakes crushed (optional)
- salt and ground black pepper to taste
Notes
Mix the zucchini, red bell pepper, onion, chickpeas, tomatoes, feta, Kalamata olives, olive oil, basil, vinegar, rosemary, capers, garlic, oregano, red pepper flakes, salt, and black pepper in a large bowl.
