
Mediterranean Zucchini Boats
Ingredients
- 6 medium zucchinis
- 1/4 medium onion chopped
- 1/8 cup green olives diced
- 1/8 cup feta cheese crumbled
- 2 cloves cloves garlic chopped
- 2 tbsp pine nuts
- 1/2 cup grated Asiago cheese divided
- 1 tbsp basil dried
- 1 tbsp oregano dried
Notes
Set an oven rack around six crawls from the heat source and preheat the oven’s broiler.
Trim closures from zucchini and cut each squash down the middle the long way. Scratch out focuses on squash and spot in a blending bowl. Include onion, olives, feta cheese, garlic, pine nuts, 1/2 the Asiago cheese, basil, and oregano and blend well. Spot blend once again into zucchini shells. Top each with a modest quantity of Asiago cheese and spot zucchini boats on a baking sheet.
Cook under the preheated broiler until cheese tans, around 10 minutes.
