Ingredients
- 1 large eggplant washed
- 1 tomato seeded and chopped
- 1 small onion diced
- 2 tbsp fresh parsley chopped
- 2 tbsp olive oil extra-virgin
- 2 tbsp white vinegar distilled
- 1/2 cup feta cheese crumbled
- salt to taste
Notes
Preheat an open-air flame broil for medium-high heat.
Penetrate the eggplant a couple of times with the tip of a paring blade or fork. Cook eggplant on preheated flame broil, frequently turning until the skin is roasted and the eggplant is delicate around 15 minutes. Put aside until cool enough to deal with it.
Expel the skin from the eggplant and bones the mash. Spot into a blending bowl, and include tomato, onion, parsley, olive oil, vinegar, and feta cheddar; blend well. Refrigerate for 60 minutes, and season to taste with salt before serving.
