
Mom’s Italian Potato Salad
Ingredients
- 5 large potatoes Yukon Gold
- 1 large cucumber chopped
- 5 stalks celery chopped
- 1 large red onion
- 3/4 cup green olives with pimento
- 1/4 cup olive oil
- 1/2 cup red wine vinegar
- 1/4 tbsp garlic powder
- salt and ground black pepper to taste
Notes
Spot potatoes in a large pan spread with water, and heat to the point of boiling over high heat. Decrease the temperature to medium-low, and stew until the potatoes are delicate, around 15 minutes. Channel and cold, at that point, cut into 1-inch blocks.
Consolidate the potatoes, cucumber, celery, onion, and olives in an enormous bowl.
