
Pasta Fagioli
Ingredients
- 1 tbsp olive oil
- 2 stalks celery chopped
- 1 onion chopped
- 3 cloves garlic minced
- 2 tbsp parsley dried
- 1 tbsp Italian seasoning
- 1/4 tbsp red pepper flakes crushed
- salt to taste
- 1 (14.5 ounces) chicken broth
- 2 medium tomatoes peeled and chopped
- 1 (8 ounces) tomato sauce
- 1/2 cup spinach pasta uncooked
- 15 ounces cannellini beans with liquid
Notes
Heat the olive oil properly in a large saucepan over medium temperature. Cook celery, Italian seasoning, red pepper flakes, onion, garlic, parsley, and salt in the hot oil until onion is translucent, about 5 minutes. Mix in chicken broth, tomatoes, and tomato sauce, and simmer on low for 15 to 20 minutes.
Combine pasta and cook 10 minutes, until pasta is tender.
