
Pollo al Abilo (Spanish Garlic Chicken)
Ingredients
- 1 (2 to 3 pound) bone-in chicken
- 2 tbsp flour all-purpose
- 5 tbsp olive oil extra-virgin
- salt to taste
- 6 cloves garlic chopped
- 2 bunch fresh basil chopped
- 1 cup white wine dry
- 1 lemon juiced
Notes
Gently coat chicken with flour on all sides.
Heat oil in a substantial, huge skillet over medium-high heat and cook chicken in groups until seared, 5 to 10 minutes for every clump. Season with salt and expel chicken pieces from skillet. Add garlic and basil to a similar oil in the skillet and cook for 2 minutes.
Return chicken pieces to the skillet and include white wine. Spread and stew over low heat until chicken has cooked through and the juices run clear around 30 minutes. Include lemon juice just before serving.
