
Roast Chicken with Lemon, Garlic, and Rosemary
Ingredients
- 1 whole chicken
- 1 tbsp salt
- 1 tbsp ground black pepper
- 2 sprigs rosemary
- 3 cloves garlic peeled
- 1 lemon halved
Notes
Preheat the oven carefully to 450 degrees F (230 degrees C).
Pat chicken dry and sprinkle salt on all sides and inside the hole. Sprinkle with black pepper. Cull the leaves from 1 spring of rosemary and sprinkle on the chicken. Spot the other entire sprig inside the hole alongside garlic and lemon.
Spot the chicken on a broiling rack set inside a cooking skillet.
Prepare in the preheated oven until never again pink at the bone, and the juices run clear around 60 minutes. A moment read thermometer embedded into the thickest piece of the thigh, close to the bone, should skim 165 degrees F (74 degrees C).
