
Spanish Cod
Ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 1/4 cup onion finely chopped
- 2 tbsp fresh garlic chopped
- 1 cup tomato sauce
- 15 cherry tomatoes
- 1/2 cup green olives chopped
- 1 or 4 cup Italian vegetable salad deli marinated
- 1 dash black pepper
- 1 dash cayenne pepper
- 1 dash paprika
- 6 (4 ounces) fillets cod fillets
Notes
Heat the butter and olive oil properly in a wide skillet over medium temperature. Cook and mix onions and garlic until onions are lightly tender, being careful not to burn the garlic. Combine tomato sauce and cherry tomatoes, and bring to a simmer. Mix in green olives and marinated vegetables, and season it with black pepper, cayenne pepper, and paprika. Cook fillets in sauce over medium temperature for 5 to 8 minutes, or till easily flaked with a fork. Serve immediately.
