
Sun-Dried Tomato Pesto
Ingredients
- 4 ounces tomatoes sun-dried
- 2 tbsp fresh basil chopped
- 2 tbsp fresh parsley chopped
- 1 tbsp garlic chopped
- 1/4 cup nuts chopped pine
- 3 tbsp onion chopped
- 1/4 cup balsamic vinegar
- 1 tbsp tomato paste
- 1/3 cup tomatoes crushed
- 1/4 cup red wine
- 1/2 cup olive oil
- 1/2 cup cheese grated Parmesan
- salt to taste
Notes
Spot sun-dried tomatoes in a bowl and spread with warm water for 5 minutes, or until delicate.
In a sustenance processor or blender join sun-dried tomatoes, basil, parsley, garlic, pine nuts, and onion; process until very much mixed. Include vinegar, tomato glue, squashed tomatoes and red wine, and procedure. Blend in olive oil and Parmesan cheddar. Season with salt to taste.
